Panoramic restaurant RAY is located on the 7th floor of the Gulliver Shopping Mall. Clear space geometry and laconic menu in Nordic style embody the conceptual and gastronomic approach of the restaurant. Like a ray of light, RAY restaurant is direct, bright and uncluttered. RAY is the place where you can focus on the main things: food, wine and atmosphere.

RAY’s space is divided into two parts. The first part is a restaurant with fine Nordic cuisine and extensive wine list. Here one can have a nice and relaxing rest, as well as brunches, meetings, elegant parties and formal events. The second part is a bar where an open kitchen with live fire is combined with a 9-meter contact bar counter. This location is perfect for cocktail parties, informal meetings and business lunches. The concept of RAY that combines both parts is naturalness, seasonality and selectiveness when it comes to ingredients, which are processed using the most innovative and avant-garde technologies.

The restaurant’s brand-chef is a popular Danish chef, Casper Gaard. He heads the kitchens of Ilse Made (Denmark), Rusty Pig (England) and Björn (Moscow) restaurants for several years now. Casper Gaard is not just a cook—he is a farmer. For most of the year, he lives on a small Danish island, Samsø, whose inhabitants are considered one of the happiest people on the planet. Casper has developed RAY’s menu and now regularly comes to Ukraine to update it according to season and to surprise RAY’s guests with novelties. Casper is assisted by his colleague from Denmark, chef Christian Clausen, who worked in restaurants in London and Copenhagen for many years. Chef sommelier of the restaurant, Oleg Kravchenko, is a real wine guru and the Best Sommelier of Ukraine; he manages RAY’s large wine collection. Chef bartender Andrey Kuzhavskiy—winner of the Bar Spirit Cup—handles the bar menu, which is filled with signature and classic cocktails.

RAY’s cuisine combines local products and Nordic approach: the menu is distinct in pronounced seasonality of dishes and a clear accent on one product instead of complex multi-component dishes. The restraint of the cuisine is emphasized by the interior: natural flowers, walls and floor covered with wood and copper, large panoramic windows that provide natural lighting. Another pleasant feature of RAY is the opportunity to observe the sunlit panorama of the capital’s center in the morning, and to enjoy spectacular sunsets and city lights in the evening.
